8 strips bacon
2 lb. Round steak
2-4oz cans mushroom stems and pieces
1 pint stewed tomatoes
½ medium onion, chopped
1-2 tsp tarragon

Directions:
Directions:
In a large pan, cook bacon until crisp. Remove to papertowel-lined plate and allow to cool. Crumble. Reserve ¼ cup bacon drippings and discard the rest. Cut steak into serving-size pieces and brown on both sides in bacon drippings. Transfer steaks to an oven-proof pan. Top meat with mushrooms, tomatoes and onion. Sprinkle with tarragon and bacon. Cover and bake at 325º for 1¼-1¾ hours. Serve with mashed potatoes
