1 c. corn oil margarine
1/2 c. sugar
1/2 c. firmly packed brown sugar
1/4 c. Egg Beaters
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt optional (omit)
1/4 tsp. nutmeg
3 c. Quaker Quick Oats
1 c. raisins
1 c. chopped nuts

Preheat oven to 375. In a large bowl cream margarine and sugar together. Add in egg and vanilla gradually. In another bowl blend remaining dry ingredients together. Add to margarine mixture. Drop by rounded spoonfuls onto ungreased cookie sheet. Bake 8-10 minutes for chewy, 10-11 minutes crispy. Cool 1 minute then remove. Store cookies in air tight container.
