2 large cans V8
1 16 oz good beef broth, homemade or all natural
10 tomatoes chopped fine
2 small zucchini chopped fine
2 small cucumbers chopped fine
1 red onion chopped fine
1 small green pepper chopped fine
1 small jalapeño pepper
3 cloves garlic chopped fine
¼ - ½ C good quality olive oil
Salt and pepper to taste
Dash Tabasco
1/8 C chopped parsley
1/8 C chopped cilantro
Fresh large cut croutons

Directions:
Directions:
Chop all vegetables
Mix beef broth and V8 juice together
Add vegetables to liquid mixture and then drizzle olive oil into mixture
Fold in cilantro and parsley
Serve with coarse salt, extra cilantro, Tabasco sauce, and croutons on the side
