2 pounds lean pork ( 1” cube)
1 onion large
2 large cloves garlic
2 pounds Albuquerque Tortilla Company Frozen Pozole Corn
4 quarts chicken broth
1 – 28 oz. Red Chile Puree or New Mexican Red Chile powder into puree
2 teaspoons salt
˝ tsp. Mexican Oregano
Cumin seeds and cumin

Sauté pork in olive oil
Add pork, onions, and garlic, salt and chicken broth in large pot
Prepare red Chile mix as directed
Add red Chile to pot
Rinse posole and add to pot, cook for 2 hours or until corn starts to pop
Reduce heat add oregano, cumin and cumin seed let simmer.
Top with cilantro
