Ingredients:  
Wash and chop a bunch of Kale set aside
Chop 4 cloves garlic
Chop 1 onion
Chop 1 celery stalk
Chop ˝ small bunch parsley
Finely slice 3-4 carrots
Chop 5-8 new potatoes
Chop 3 tomatoes
Open 2 cans kidney beans
Open 6 cans beef broth
Open 1 large jar v – 8
Set aside 4 tbls. Balsamic vinegar
1 tsp red pepper
Salt to taste
Chop 1 ˝ packs linguica

Sauté linguica drain fat and set aside
In large soup pot
Sauté garlic, onion in olive oil till golden, add carrot, celery, tomatoes, parsley and salt and red pepper. Cook over low heat for 5 minutes. Then add beef broth and v 8 and bring to simmer. Simmer for 15 minutes then add kale, drained linguica, potatoes, and simmer till potatoes are soft, add balsamic vinegar and black pepper. Serve with crusty bread and salad.
