1 large can of salmon
¼ cup buttermilk
¼ cup cornmeal
1 egg
1 T onion finely chopped
1 T green pepper, finely chopped
¼ tsp black pepper
4 T shortening

Directions:
Directions:
Put salmon in bowl, flake removing bones. Beat egg; combine with milk, meal and other ingredients (except shortening). Mix the above ingredients with salmon (do this gently). Heat shortening in pan until very hot, reduce heat and add salmon mixture (using a spoon to shape into croquettes). Fry, brown on each side. These are good warm or leftover cold.
