2 1/4 c. flour
1/3 c. sugar
2 T. baking powder
1 tsp. baking soda
1/2 tsp. cinnamon
1/3 c. plus 2 tsp. raisins
3/4 lb. Granny Smith apples cored & grated
3 eggs, beaten
2 1/4 oz. shredded Swiss cheese
1/4 c. oil

Directions:
Directions:
Preheat oven to 375º.
Spray 9-10 large muffin pan cups with cooking spray or line with baking cups. Set aside. In a large bowl sift together flour, sugar, baking powder, soda and cinnamon.
In a medium bowl combine apples, raisins and cheese; add eggs and oil and stir to combine. Add to flour mixture and stir until thoroughly moistened.
Fill each baking cup with an equal amount of batter (about 2/3 full). Bake in the middle of oven until golden for 20-25 minutes.
Cool pan on rack.
