2 c all-purpose flour
2 c whole wheat flour
3 tsp baking soda
1 tsp baking powder
1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp salt
2 eggs
1/2 c canola oil
1 1/2 c unsweetened applesauce
1/4 c honey
1 c packed brown sugar
1 tsp vanilla extract
3 c shredded zucchini
1/3 c almonds or pecans chopped

Directions:
Directions:
In a large bowl, combine the flour, baking soda, cinnamon, nutmeg and salt. In a large mixing bowl, beat the eggs until frothy. Add the oil, applesauce, sugar, honey and vanilla; beat until blended. Stir into dry ingredients just until moistened. Fold in the zucchini and almonds.
Pour into 21 mini loaf pans coated with nonstick cooking spray. Bake at 350 degrees F for 37-45 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.
