2 1/3 cup flour
1 3/4 cup sugar
1 1/2 tsp. baking powder
1 1/2 baking soda
1 tsp. salt
2/3 cup milk
1 tlb. Lemon juice
2-2 1/4 c. mashed bananas
3 eggs
1/2 cup butter
1 tsp. Vanilla
1 tlb. honey
2/3 cup chopped pecans or walnuts

Spray 2 loaf pans or 18 mini pans. Melt butter until softened, not totally liquid. Stir until smooth. Measure dry ingredients and set aside. Add lemon juice to milk stir until it becomes thick. Place in a large bowl with all remaining ingredients except nuts. Beat. Add dry ingredients while beating on low. Beat for 3 minutes on high. Pour into pans and bake 45 to 50 minutes at 350º. 25 minutes for mini loafs.
