Smoked Sausage and Potato Casserole Recipe

1 pkg. skinless smoked sausage
8 Yukon potatoes, quartered
1 green pepper, diced
1 yellow pepper, diced
1 large onion, sliced
2 tbsp. butter
1 tsp. oregano
1 tsp. basil
2 tsp. olive oil
black pepper to taste

Preheat oven to 375,
Microwave potatoes until fork tender.
On a tall baking sheet, drizzle with olive oil. Combine all ingredients together and spread onto the baking pan. Cover with aluminum foil and bake for 40 to 50 minutes until veggies are tender.

Connie made this for us while all of us girls were hanging out at mom's. It is really easy and very versatile. I like to include a lot of onions, hardwood chicken sausage and yellow squash in mine. It was one of her great finds from Facebook.
