1 ½ lbs lean ground beef
1-2 eggs
6-8 saltine crackers
½ of a large onion diced (or to taste)
2 tbsp. of milk
Optional: finely chopped celery leaves
Catsup
Chili powder

Directions:
Directions:
Whisk egg(s) in a bowl, add crushed saltine crackers that have been softened with 1-2 tbsp of milk. Mix well. Add onion and celery leaves. Then blend the hamburger into the mixture, using your hands.
Once well mixed, pat into an 8 x 8 glass pan. (This could also be placed into a glass loaf pan.)
Bake at 350 º for 50 minutes or until done. Spread catsup over the top during the last 20 minutes of baking; sprinkling lightly with chili powder if desired.

Meatloaf was always a favorite at our house. Mom would serve it with mashed or boiled garden potatoes and fresh green beans. It is still one of the best "comfort from home" foods out there on a cold winter day.
