1 1/2 cups egg whites
Add 1 tbsp water while beating
1 rounding (rounded) tsp cream of tartar
1 1/2 cup sugar
1 cup cake flour
1 tsp of vanilla or almond flavoring

There were no directions with this- just an ingredient list; but I recall Mom beating the egg whites (with the tbsp. of water) until they were white and fluffy. They would form peaks as she lifted the beaters out. At that point she would add the cream of tartar and sugar. Then slowly add in the cake flour and last ... the flavoring. Gently use a spatula to put into lightly greased and floured angel food cake pan. Try not to have the mixture up the sides of the pan.
Bake in a "moderate" oven until done. (I'm thinking 350 degrees until lightly browned on top.)

Mom would make "her" angel food cakes often, along with birthdays and special occasions. No other angel food cake had the flavor or texture of hers! Most of her recipes did not include directions, oven temperatures or bake times. She was truly from the era of a pinch of this and a handful of that. Funny thing is it turned out perfect and tasted the same every time! I still remember throughout my childhood, coming in the door to the kitchen,after getting off the school bus, to the wonderful smell of her angel food cake as it sat cooling on the counter. The well used silver, cake pan hanging upside down on a glass pop bottle.
