"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
1 Pound of Breakfast Sausage
1 bag (8 ounces) of Sharp Cheddar Cheese (shredded)
2 Cans of Crescent Rolls
Cooking Spray

Directions:
Directions:
Preheat oven to 400 degrees. Brown sausage in frying pan. Drain grease from pan. Remove sausage and set on paper towels to absorb excess grease. Use a non-stick spray on the bottom of a baking dish. (9x13 glass dish works best) Roll out one can of crescent rolls. Sprinkle 1/2 bag of cheese over crescent rolls. Spoon sausage on top of the shredded cheese and crescent rolls. Sprinkle remaining cheese over the sausage. Open the other can of crescent rolls and place crescent rolls on top of the cheese. Pinch edges of crescent rolls all around the perimeter of the casserole to seal in sausage and cheese. Bake approximately 15 minutes at 400 degrees or until brown on top. Time may vary. Make sure it is completely cooked or the casserole will be "doughy."
