4 cups flour (can be a mixture of white and wholemeal)
2 tsp bicarb soda
1 tsp salt
60 gm butter
2-21/2 cups buttermilk (add lemon juice or white vinegar to milk and leave for 10 minutes).

Directions:
Directions:
Preheat oven to 190c. In your trusty electric mixer, mix all ingredients until well blended. Turn out onto a floured table and shape into a ball about 300mm wide. Cut a deep cross on the top, place into oven and cook for 35-45 minutes. Eat hot with lashings of butter.
