1 cup diced Canadian Bacon OR 1 pound sausage (I use Jimmy Dean sausage)
1/4 cup chopped green onions
3 tblsps. butter
1 dozen eggs
1 (3-oz.) can sliced mushrooms, if desired
4 tblsps. melted butter
2 1/4 cups cracker crumbs
Paprika
1 recipe Cheese Sauce*

Directions:
Directions:
Saute sausage in butter. Add onions. Add beaten eggs. Scramble until just set. Fold in 3-oz. jar of sliced mushrooms, if desired, and 1 recipe cheese sauce. Put into greased 12x7" baking dish. Combine the 4 tblsps. melted butter with the cracker crumbs and scatter over top of casserole. Sprinkle with paprika. Bake at 350º for 30 minutes OR cover and chill until ready to cook.


*Cheese Sauce: Melt 2 tblsps. butter. Blend in 2 tblsps. flour, 1/8 tsp. salt,, 1/8 tsp. pepper. Stir in 2 cups milk. Cook until bubbly. Stir in 1 cup shredded sharp cheddar cheese. Mix until cheese melts.
