Ingredients:  
1 lb. raw beets
2 carrots, peeled
1/3 c. torn fresh parsley

Dressing:
1/4 c. fresh lemon juice
1 T. olive oil
1 T. honey
3/4 tsp. ground cumin
1/2 tsp. ground coriander
1/4 tsp. ground cinnamon
1/8 tsp. cayenne pepper
salt

Directions:
Directions:
In food processor shred beets, then carrots.

Whisk together dressing ingredients.

Toss beets, carrots and parsley into dressing.
