Ingredients: 2 5 lbs spaghetti squash 2 lbs ground turkey 2 jars of your favorite spaghetti sauce
Spaghetti Squash: Olive oil Sea Salt Black pepper
Turkey meatballs: 1 teaspoon sea salt 1 teaspoon pepper 1 teaspoon garlic powder 1 teaspoon dried parsley or 2 teaspoons fresh chopped parsley

Directions:Preheat oven to °400, line a baking sheet with aluminum foil large enough to accommodate the spaghetti squash. Cut the 2 spaghetti squash in halves and scrape out the seeds. Drizzle on olive oil just enough to rub into the meat of the squash. Sprinkle sea salt and pepper to taste. Place skin up and poke holes with a fork. Bake for 20 minutes. Then flip over so skin is down and bake for another 20-40 minutes until you can poke with fork where there's no resistance. Let cool for about 10 minutes. Take a fork a scrape out the spaghetti squash long ways. Will look like clear spaghetti noodles.
Put ground turkey in medium mixing dish and add the measured out seasoning above. But do it in sprinkle manor because when mixing with hands you can't over mix the meat and seasoning or the meatballs will not stay firm. Roll into 1 inch balls. Add to your favorite spaghetti sauce. Bring to a boil and then turn heat down to simmer for about 20-30 minutes.
Plate everything to your liking. |
