"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

1 tsp turmeric
1 tsp kosher salt

4 skinless fish fillets: cod, tilapia, haddock, halibut or salmon.

Directions:
Mix seasonings together well. Pat fish dry, sprinkle both sides to cover, rub in lightly. Sauté in coconut oil (coconut oil is best, but any oil is fine). Depending on thickness of fish, will take between 3-5 minutes in total.

Serve with cilantro lime rice ( 2 c. cooked rice, juice from ˝ lime, 1 tbs. butter or olive oil and chopped cilantro to taste.) and any green vegetable.

Personal Notes:
Personal Notes:
This is super simple, super fast and super good. It isn't too spicy for even the spice shy. Make a quadruple batch of the spice mixture and store so you don't need to mix it every time.
