5 lbs watermelon rind
Cold Water to cover
8 tsp powdered alum
8 cups (4 lbs.) sugar
1 qt Cider Vinegar
1tbs Whole cloves
2 Cinnamon sticks, broken

Directions:
Directions:
Cut the peeled rind into lengthwise strips (1 ½ in. wide); cut the strips into triangular pieces. Place in a kettle; cover with water; cook until pierceable. Take from the heat. Stir in the alum. Let stand.

Next day, rinse under running water; drain in a colander. In the same kettle bring sugar, vinegar and spices to a boil, stirring.

Add the rind; let stand. Bring the rind and syrup to a boil each day for five consecutive days. Then pack the rind into hot sterilized jars; fill with boiling syrup and add a piece of cinnamon. Seal as canned fruits. Ready to eat in 3 weeks.

Nothing thrown away at Grandma's house. Not even the watermelon rinds. She made pickles out of them. Really good. Then she taught us kids how to cut the rind and make funny false teeth.
