25 oz silken tofu (soft tofu - about 3 cups)
2 cups chocolate pieces or chips, melted
1/2 cup powdered sugar (confectioner's sugar)
1 1/2 tsp of rum extract or other flavoring (optional)

Graham cracker crust (I used chocolate grahams)

Toasted coconut garnish (optional)

Directions:
Puree the tofu until smooth in a food processor, then add melted chocolate, powdered sugar, and flavoring. Continue to puree until smooth and creamy.

Pour into prepared graham crust. Refrigerate for at least 3 hours to allow the tofu to firm.

*I used a little extra tofu in my recipe (2 full packages - around 30 oz). The additional tofu didn't negatively affect the recipe.
*If your pie doesn't feel firm enough after a few hours, you can put it in the freezer for about 15 minutes before slicing. However, the texture is best if you give it extra time in the fridge.

Many people hear tofu in a dessert and say YUCK! But this pie is fantastic. I recommend making it and serving it as a regular mousse pie and see if anyone can tell the difference!
