1/4 cup hot mashed potatoes
1 tsp melted butter
1 3/4 cups powdered sugar
1 1/2 cups flaked coconut
dash of salt
1/4 tsp grated lemon or orange rind
1/2 tsp vanilla

Directions:
Directions:
Combine potatoes and butter in a medium bowl. Gradually add sugar, beating until thoroughly blended. Add remaining ingredients, mixing well. Drop by tsp onto waxed paper. Let stand until firm.
