Meat Sauce:
2 kg. Lean hamburger
2 large onions
2 cloves garlic
2 tbsp sugar
2 tsp salt
1 tbsp fresh basil or 1/2 tsp dried
1/2 tsp fennel (opt.)
1/4 tsp pepper
2 tbsp fresh parsley or 1/2 tsp dried
2 large cans tomato sauce
1 package onion soup mix

Spinach Layer:
1 onion
2 garlic cloves
3 tbsp butter
3 tbsp cornstarch
2 tbsp parsley
2 tsp fresh basil
pinch of nutmeg
3 cups milk
2 cans chopped spinach (drained)

Cheese Layer:
2 cups cottage cheese
1/4 cup parmesan cheese
1 cup mozzarella cheese
2 eggs beaten
2 tbsp fresh parsley
1/2 cup milk

907 g. Mozzerella
2 boxes of noodles

Directions:
Directions:
1) Grate 907 g mozzarella cheese.

2) Prepare meat sauce as for spaghetti.

3) For Spinach layer, saute onions and garlic in butter until soft. Mix cornstarch in small amount of milk. Heat remainder of milk in microwave until hot. Add parsley, basil and nutmeg to onions. Add hot milk and then cornstarch mixture and bring to a boil and thicken. Add drained spinach and mix.

4) Mix together ingredients for cheese layer.

5) Assemble Lasagne as follows:

Spinach Layer
Noodles
Meat
Noodles
Cheese Sauce
Noodles
Meat
Shredded Mozzarella

6) Bake at 350°F for 1 hour then let stand 30 minutes before serving.

Oma put together the best of several different lasagna recipes to come up with this one. It is a great recipe for a crowd which makes it perfect for New Year's parties.
