1 1/2 cups raisin bran, slightly crushed
3/4 cup brown sugar
3 tsp cinnamon
1 3/4 cups unbleached all purpose flour
1 teaspoon baking soda
1 tsp baking powder
1/8 tsp salt
1 cup (8 oz) plain nonfat yogurt
3 egg whites
1/3 cup skim milk
1/4 cup vegetable oil
1 1/2 tsp vanilla
1/2 tsp butter flavor

Mix 1/2 cup cereal, 1/4 cp brown sugar, and 2 teaspoons cinnamon; set aside. Mix together flour, remaining 1 cup cereal, remaining 1/2 cup brown sugar, remaining 1 tsp cinnamon, baking soda and baking powder, and salt. In separate bowl combine yogurt, egtg whites, skim milk, oil, vanilla extract and butter flavor; stir until blended. Stir into flour mixture and blend well. Pour 1/2 the batter into a 9 inch tube pan that has been sprayed with vegetable cooking spray. Sprinkle with half the cinnamon mixture. Repeat layers. Bake at 350 degrees for 30 to 35 minutes or until cake tests done. Cool in pan 10 minutes then invert onto wire rack to complete cooling. Can be drizzled with glaze if desired.

Glaze: 1/4 cup powdered sugar
1/4 tsp vanilla
Skim milk
Combine powdered sugar and white vanilla. Add enough milk to achieve desired consistency.
