1 1/2 lb ripe tomatoes
1/2 teas salt
1 tsp black pepper
6 Tbsp chopped fresh basil or 2 Tbsp dried
1 cup chopped jumbo sweet onion (Vidalia is best)
3 cup grated extra sharp cheddar cheese
1 cup Dukes Mayonnaise
2 baed 9" deep dish pie crusts

Preheat oven to 350 º.
Dip tomatoes in boiling water for 1 minute and they will peel easier. Slice tomatoes into 1/2 inch thick slices. Drain and dry on paper towels. Divide ingredients between two baked pie crusts as follows: cover bottom of pie with tomato slices. Sprinkle with sale, pepper and basil. Sprinkle onions on top. Combine cheese and mayonnaise. Cover pies loosely but completely, spreading mayonnaise mixture with fingers. Do not press down. Bake 30-35 minutes or until cheese is bubbly and starting to brown. Remove from oven and let set 20-30 minutes before slicing.
