6-8 large potatoes, scrubbed (peel if desired)
1/2 onion, chopped
2 cups milk
1/4 lb. bacon (slightly frozen works best, then chopped into small pieces and fried crisp)
1/4 to 1/2 lb. Velveeta cheese, cubed
1 can whole kernel corn, drained
1/2 stick butter
Salt and pepper

Wash and dice potatoes. Place potatoes and onion in large stock pot and add just enough water to cover. Add salt and pepper. Bring to a boil and cook until potatoes are fork tender. While potatoes are cooking fry bacon pieces; set aside. When potatoes are ready, DO NOT DRAIN. Mash up the potatoes a little bit, then add milk. I don't measure, so about 2 cups. Lactaid milk works well for this as well. Add Velveeta cubes and stir until melted. You be the judge on how much you use. Add corn and butter. Let simmer for about 1/2 hour, then add bacon.
