1 10 oz package chopped craisin
1 tsp grated orange rind
1 Tbls orange juice
1 cup butter, softened
1 1/2 cups sugar
1 large egg
1 tsp vanilla extract
2 1/2 cups all purpose flour
1/2 tsp baking powder
1/2 tsp salt
1 cup finely chopped toasted pecans, divided

Line. 9"x5"x3" loafpan with aluminum foil, allowing foil to extend over edges of pan. Set aside.
Position knife blade in food processor bowl, add first 3 ingredients, process 45 seconds or until craisins are finely chopped. Set aside.
Beat butter at medium speed of a heavy duty mixer until blended.
Gradually add sugar, beating until blended. Add egg and vanilla, beat well. Combine flour, baking powder, and salt, gradually add to butter mixture, beating at low speed just til blended.
Divide dough into 3 portions. Knead 1/2 cup pecans into one portion of dough, press into prepared loaf pan.
Knead craisin mixture into one portion of dough, press into loaf pan over pecan mixture.
Knead remaining 1/2 cup pecans into remaining dough, press into pan over craisin mixture. Cover and chill for at least 2 hours.
Invert loafpan onto cutting board, removing and discarding aluminum foil. Cut dough lengthwise into 4 sections. Cut each section of dough crosswise into 1/4 inch slices. Place slices 1 1/2 " apart on lightly greased cookie sheets.
Bake at 350 º for 9-10 minutes or until lightly browned.
