Lisa Wood, 36 Glendale Rd., Belleville (1985)


1 tbsp. butter
1 lb lean ground beef
1 envelope onion soup mix
1 (10 oz) can tomato soup
1/2 c flour
1/2 tsp salt
1/2 tsp baking soda
1/2 c cornmeal
3/4 c milk
2 eggs slightly beaten
1 can kernel corn drained
2 c cheese shredded

melt butter in large skillet. Saute beef until brown. Add onion soup mix and tomato soup. Cover and simmer five min. Meanwhile, sift together in a medium sized bowl flour, salt, and baking soda. Add cornmeal. Combine milk and eggs. Make a well in dry mixture. Add milk mixture until lightly combined. Add corn, mix well. Spoon meat mixture into a 2 quart casserole. Sprinkle with 1 c cheese. Cover with batter and sprinkle with remaining cheese. Bake uncovered at 400F for 55 to 60 min.
