1/4 tsp Dijon mustard
1 tsp apple cider vinegar
2tsp finely chopped onion or shallot
1 Tbls olive oil , divided
1/2 cup pecans, halves are better than pieces
3/4 lb fresh green beans, trimmed and halved
1 1/2 oz blue cheese ( or feta)
1 Tbls butter

Directions:
Directions:
Whisk together mustard, vinegar, and 1 1/2 teaspoons olive oil for dressing. Set aside
In small skillet, melt butter and add pecans , sauté , stirring frequently, about 1-2 minutes. Transfer to paper towel.
In large skillet, use remaining olive oil, add onions and green beans and sauté till tender, about 5-7 minutes.
Transfer to serving dish, add dressing and toss. Crumble blue cheese (or feta) over beans and top with pecans.
