1 lb thin green beans trimmed
2 small or 1 large shallot halved and sliced
2 tsp fresh white hulled sesame seeds
2 tbsp butter
salt and coarse ground pepper

Directions:
Directions:
A handful at a time, drop washed beans into 3 qt pot of boiling salted water. Bring the water back to a boil and boil rapidly for 8-10 minutes, or until the beans are tender but slightly crunchy. Drain the beans as soon as they are done. Run cold water over the beans for 3 minutes. This will stop the cooking and retain the color taste and texture. Set beans aside in a colander to drain.

In a large skillet, melt the butter and begin sautéing the shallots. Add the sesame seeds to the pan and cook until the shallots are tender and the sesame seeds are slightly toasted.

Add the cooled beans to the pan and toss with the shallots and sesame seeds until the beans are warmed and coated with the mixture. Sprinkle beans with kosher salt and fresh ground pepper and server immediately.
