1/4 C ea sour cream & plain yogurt
2 TB chopped fresh parsley
1 teaspoon Dijon mustard
1/8 tsp each salt & pepper
2 tablespoons butter
6 Portobellos, sliced 1/4-inch-thick
2 tablespoons minced onion
2 tablespoons all-purpose flour
1/2 cup vegetable broth
Wide noodles, cooked

In a small bowl, mix sour cream, yogurt, parsley, mustard, salt, & pepper. In a large skillet, melt the butter over medium-high heat. Add the mushrooms & onion; cook, stirring, until soft, about 6 minutes. Stir in the flour until absorbed. Stir in the broth to de-glaze the pan. Cook, stirring, until broth boils. Stir in sour cream mixture. Cook, stir until heated, about 1 minute. Serve over cooked noodles.
