2-4 lbs of lean ground beef
2 medium onions chopped
2 cans of crushed tomatoes
2 can of tomato paste
2 cans of tomato sauce
Red Wine
Sugar
Italian seasoning
garlic
Rosemary
Olive oil

Brown meat and put aside
Add about 3 Tbsp. Olive oil to bottom of large sauce pan. Sauté onions and garlic until clear and add in Italian seasoning. Then pour in cans crushed tomatoes, tomatoes sauce and tomato paste. Stir frequently until it comes to boil. Add drained and browned meat (if you want a marinara sauce do not add the meat). I simmer sauce and add more garlic or Italian seasoning if needed according to taste Add about 1/2 c of sugar and 1/2-1 c. of red wine. Crush about 1/2 Tbsp. dried rosemary (two springs of fresh) in the palm of your hand and add to the sauce. Let simmer for 1-2 hours.

Hints: I actually make this recipe with 10 lbs of beef and use a large industrial can of crushed tomatoes and 1 large industrial can of tomato sauce. I add enough tomatoes paste to thicken it up generally 4-6 cans and enough meat to make it very hearty. I use about 3 onions and about 1/4 cup of garlic and approximately 3/4 c. of Italian seasoning with a cup of sugar and wine. I then freeze the strong sauce in 4-6 cups increments. During preparation, I put the frozen sauce in a crock pot, add a can or two of diced tomatoes and let it cook on warm most of the day until serving.

I use this sauce in lasagna, spaghetti, manicotti, and for serving with cheese sticks
