1 whole chicken breast, split, skinned, boned and thinly sliced
3 Tbsp cornstarch
1/4 cup soy sauce
2 Tbsp peanut oil
1/2 pound broccoli, cut in small pieces
1 medium onion, peeled and thinly sliced
1/4 pound mushrooms, wiped clean and sliced
2 cups fresh bean sprouts
1 cup hot chicken stock

Directions:
Directions:
Stir first 3 ingredients in bowl until chicken is thoroughly coated; set aside 15 minutes. Heat 1 Tbsp oil until hot. Add chicken, stir-fry 3 minutes, remove with strainer. Add 1 Tbsp oil, heat until hot. Add broccoli and onion, stir-fry 2 minutes. Add mushrooms, bean sprouts, chicken. And stock; cover; cook 5 minutes or until vegetables are tender-crisp. Serve immediately.
