Beat together:
4 eggs
2 c white sugar
Add:
2 c all purpose flour
2 tsp baking powder
2 tsp baking soda
1 tsp salt
1 tsp cinnamon
1 1/2 c oil
3 c grated carrots
1/2 c coconut
1/2 c chopped walnuts
1/2 c raisins

Directions:

Mix well. Bake in one 13X9" pan or two 8" square pans at 350F for 50 to 60 min.
Icing:
1/4 c butter
4 oz cream cheese
2 c icing sugar
1 tsp vanilla
Cream butter and cream cheese together and add icing sugar and vanilla.
