1 Purple onion
1 Yellow bell pepper
1 small pkg. fresh whole mushrooms (cut in half) or
6 small tomatoes (either halved or quartered)
2 carrots (cut to 3 or so long and quartered)
1 zucchini squash (sliced thin)

Directions:
Directions:
Line a cookie sheet with aluminum foil and spray with cooking spray. Layer veggies on sheet and drizzle with olive oil. Season with salt and pepper and garlic power. Cook for 45 minutes at 350.

Mike's note: This is a got-to for Stephen and Kristen on an almost daily basis. Deb and I have made it and it goes great with beef, chicken or pork. Its easy, colorful, and bound to be healthy for ya!
