6-7 lg. Flour Tortillas
1-2 Jalapenos- seeded and diced (optional)
Vegetable Oil
1/2 lg. Onion- diced
1 sm. Green Bell Pepper- seeded and diced
1 clove of Garlic
Salt and Pepper to taste
1 sm. Red Bell Pepper- seeded and diced
Shredded Cheese
1 sm. Yellow Bell Pepper- seeded and diced

Preheat oven to 325º. Line baking sheets with parchment paper.

Using a 2.75" diameter biscuit cutter or the top of a glass with similar diameter, cut out circles from the flour tortillas. Place them side by side on the prepared baking sheet. Using a pastry brush, brush the tops of the tortillas, with vegetable oil.

Bake tortillas for 5-7 minutes, watching them carefully as they can burn quickly. You'll want to remove them as soon as they start turning a light brown; set aside and turn the oven broiler on.

In a skillet, with vegetable oil or butter, heat to medium-high heat and sauté garlic until fragrant. Add peppers and onion and saute with salt and pepper until soft and tender; about 5 minutes. Remove from heat.

To assemble bites: top tortilla rounds with 1-2 teaspoons of veggie filling, then sprinkle with cheese. Place tortilla rounds under broiler for 2-3 minutes or until cheese as melted. Remove from oven and serve.
