Rock salt other coarse salt
18 medium oysters
8 Tbsp butter
2 cloves garlic, very finely minced
1 tsp dried oregano
1/4 c grated Parmesan
Fresh chopped parsley

Directions:
Directions:
Pour about 1/2 inch of rock salt on a serving platter. This will help hold the oysters level once they're cooked.

Start with oysters that are all completely closed. If any of the oysters are not open, throw them away. After purchasing the oysters, keep them on ice in a bowl in the bottom of the fridge until ready to eat.

Before shucking, wash and lightly scrub the oysters thoroughly in water to prevent grit from getting inside once you open them. Gently pop open oysters and remove and discard the top shell.

Melt butter in a small saucepan. Add minced garlic and oregano and saute for 2 to 3 minutes.
Remove from heat and pour a spoonful on each oyster.
Start Trager grill on Smoke with the lid open until the fire is established. Set the temp at 450 degrees and preheat with lid closed for 10 to 15 minutes.
Arrange oysters on the grill grate. Grill for 6 to 8 minutes or until juices are bubbling. Using tongs, transfer oysters to the prepared serving platter. Before serving, sprinkle with grated Parmesan and chopped parsley.
