2 pounds frozen hash brown potatoes, thawed
1 medium chopped onion
1 can cream of mushroom soup
2 cups sour cream
2 cups shredded Colby or Colby-jack cheese
1 teaspoon salt
Dash of pepper
1/2 stick butter or margarine
Corn Flakes, crushed

Directions:
Directions:
Preheat oven to 350º. Coat 9 x 13 baking dish with cooking spray. Saute 2 tablespoons butter with chopped onion in a small pan over medium heat until translucent. Combine hash browns, mushroom soup, sour cream, cheese, salt & pepper in a large mixing bowl. Add onions and stir until thoroughly mixed. Spoon mixture into baking dish. Cover with crushed corn flakes. Melt remaining butter and drizzle over top of corn flakes. Bake 45 - 50 minutes uncovered until potatoes are fork tender.
