3 lb cooking apples
4 or 5 mediums onions
3/4 c brown sugar
1 1/2 tsp salt
3/4 tsp pickling spice
3/4 tsp coriander
1 1/2 c vinegar
2/3 c molasses
3/4 tsp ground ginger

Directions:
Directions:
Peel and core apples and chop fine. Peel and chop onions. Put in large saucepan or Dutch oven. Add brown sugar, salt spices vinegar and molasses. Stir thoroughly. Bring to boil over medium heat stirring often. Simmer uncovered over low heat for 2 hours stirring often (or until jam consistency is reached). Cool and pour into jars and cover.
