3-4 lb bass (split and boned)

STUFFING

1/2 cup chopped onion
1/4 cup butter, melted
2 cups bread crumbs
1/3 cup finely chopped dill pickle
1/2 tsp salt
1/4 tsp pepper

SAUCE

1 6-oz can tomato paste
2 cups water
1 T lemon juice
1 tsp salt
1/4 tsp pepper
1/4 cup chopped parsley
Directions:
Directions:
Saute onion in butter until tender. Add bread cubes, pickle, salt and pepper; toss lightly to blend. Wash fish and pat dry. Stuff fish with stuffing. Sew or skewer edgest together loosely. Place in greased shallow baking dish.

In sauce pan, mix remaining ingredients except parsley. Bring to a boil, pour over fish. Sprinkley with chopped parsley.

Bake at 350F for 50-60 minutes or until fish flakes easily with a fork. Garnish with lemon.

SUGGESTED MENU AND PREPARATION SCHEDULE

Stuffed Baked Bass Mashed Potatoes
Broccoli Spears (with olive oil and garlic) Chocolate Mouse

4:00 pm (or earlier, refrigerated) Prepare stuffing
4:30 Wash fish, dry well (earlier, refrigerated okay)
4:40 Stuff fish, prepare tomato sauce
5:00 Bake stuffed bass in preheated oven
5:05 Cook Broccoli until just tender (earlier okay)
5:10 start potatoes
5:45 Heat cooked Broccoli in olive oil
5:50 Mash Potatoes
6:00 Bon Appetit!
