2 lbs medium squid, cleaned
15 oz ricotta cheese
2 slices white bread, shredded
1/4 cup Parmesan or Romano cheese
1 T chopped fresh parsley
2 eggs
2 T melted butter
salt and pepper to taste
dash garlic powder
1/2 cup olive oil
1/8 tsp oregano
1 8-oz can tomato sauce

Directions:
Directions:
Preheat oven to 350F. Wash squid and drain. Mix ricotta with bread, cheese, eggs, parsley, salt, pepper, butter. Stuff bodies of squid, sew openings.

Brown quickly in hot olive oil til squid turns pink. Place in deep baking dish. Add oregano and sauce; pour over squid. Bake 40-45 minutes. Sauce may be used over fine spaghetti.
