3 pounds boneless, skinless chicken breasts
1 cup taco seasoning
1 can whole kernel corn drained
16 - 24 ounce jar of mild salsa
1 medium can sliced black olives
2 - 3 cups shredded Colby or Colby-jack cheese

Directions:
Directions:
Preheat oven to 350 degrees. Coat deep 10 x 15 x 2 baking dish with cooking spray. Pour taco seasoning into quart size zipper bag. Portion breasts into 1/4 - 1/3 pound sections. Place individual portions in bag, seal and shake. Remove coated breast portion and lay in baking dish. Repeat with remaining breast portions. Cover chicken gererously with salsa. Sprinkle corn over top and bake 55 minutes. Remove from oven, sprinkle shredded cheese and then olives over top. Bake an additional 10 - 15 minutes to melt cheese. Serve with rice (we prefer Uncle Ben's Original Wild Rice).
