Fruit Pizza Recipe

1 roll sugar cookie dough, at room temperature.
1 8 oz package cream cheese, at room temperature
1 C powdered sugar
1 C fresh strawberries, washed and well drained
1 C blueberries, washed and well drained
1 can mandarin oranges, well drained
1 can pineapple chunks, well drained
1 jar apricot preserves ( or 1 package of strawberry pie glaze)

Press the cookie dough out on a pizza pan ( or cookie sheet) that has been sprayed with cooking spray.
Leave about one inch space around the edge to allow room for expansion. Bake according to wrapper.
Allow to cool completely.
Mix cream cheese and powdered sugar together and spread over the cookie.
Arrange strawberries, blueberries, oranges, and pineapple on cheese.
Heat the preserves in the microwave (1 - 2 minutes in jar with the lid off). Pour over fruit.
Cut with a pizza cutter and serve.

Alternatively, a variety of fruits can be used. If canned fruits are used, be sure they are well drained so that the cookie crust does not become soggy.
Use lemon or pineapple juice to keep fruit fresh.(Place fruit in bowl with the juice until ready to use. Drain fruit completely before placing on pizza).
