2 c. whole milk
8 T butter, melted
1/2 c vegetable oil
4 1/4 c tapioca flour
4 eggs
2 cups grated farmer's cheese, or any firm fresh cheese ( usually use a combination of cheddar and parmesan
1/4 c. parmesan
salt to taste

Mix milk, salt, oil, and butter in a pot. Bring to a boil. As soon as it boils, remove from heat. Stir tapioca flour into milk and butter mixture. Stir in eggs and cheese and mix well. Let mixture cool so that it will be easier to handle. Flour hands (tapioca) and shape dough into golf sized balls and place them on a baking sheet. Bake at 350 for 20-25 minutes or until they are puffed up and golden. They will rise slowly and puff up in the last 5 - 10 minutes. Serve warm.
