2-3 carrots
2 avocadoes
2 tsp. Dijon mustard
1 lemon
olive oil

Directions:
Directions:
Grate carrots; cut avocados in chunks. Mix together in bowl. Make dressing: mix salt, pepper, mustard, lemon juice, and olive oil. Pour dressing over the carrots and avocados. Serve chilled.
