2½ lbs. ground chuck
2 yellow onions, chopped
6 garlic cloves
3 jalapeno peppers
3 serrano peppers
1 or 2 habanero peppers
1 can kidney beans, rinsed
1 can black beans, rinsed
2 cans diced tomatoes
¼ cup vinegar
2 T. Worcestershire Sauce
1 bottle dark beer
⅛ cup baking cocoa
2½ T. chili powder
3 tsp. ground cinnamon
2 T. dried oregano
1½ T. ground cumin
1½ tsp. ground allspice
1 T. paprika
1 tsp. chipotle pepper powder
1 T. Franks Red Hot Sauce
3 bay leaves
½ tsp. sugar
salt and pepper to taste
shredded cheddar cheese
sour cream
chopped green onions

Directions:
Directions:
In a big pot, cook beef in beer, stirring frequently to break down ground beef. Add chopped onions, garlic, jalapenos, serranos, and habaneros to beef while cooking. Add beans, tomatoes, vinegar, cocoa, and all other dry ingredients and seasonings; bring to a boil. Reduce heat and add beans; cover and simmer for 1½ - 2 hours. Discard bay leaves, and serve. Garnish with cheese, sour cream, and green onions. Serve with tortilla chips or oyster crackers.
