1 lb. ground beef
1 cup Onion (diced)
1 cup Carrots (julienned)
3 sticks Celery (chopped, about 1 cup)
2 cloves Garlic (minced)
2 14.5 ounce cans diced Tomatoes
1 15 oz can Red kidney beans with liquid
1 15 oz can White northern beans with liquid
1 15 oz can can Tomato sauce
1 12 oz can can V8 vegetable juice (Regular or Spicy - your preference)
1 Teaspoon Vinegar
1/12 Teaspoon Salt
1 Teaspoon Oregano
1 Teaspoon Basil
½ Teaspoon Pepper
½ Teaspoon Thyme
½ lb Pasta( Ditalini)
Grated Romano/Parmesan - Optional

Directions:
Directions:
Place beef in large stock pot over med heat until cooked, drain off fat.
Add onion, carrot, celery and garlic and saute for 10 minutes.
Add remaining ingredients, except pasta and simmer for 1 hour.
Boil pasta to desired tenderness and add to soup. Scoop soup into bowls, If preferred, add grated cheese and enjoy.
