FILLING

1 lb ground chuck
3 eggs
1/2 cup grated cheese
1 package frozen spinach, chopped, cooked and squeezed dry
1 tsp salt and pepper
15 oz Ricotta
2 cloves garlic, chopped

DOUGH

8 eggs
1/4 cup oil
1/4 cup salt water
5-6 cups flour

Mix eggs, oil and water with fork. Add 1 cup flour at a time. Knead until all mixed. Knead until soft and smooth. Let it rest for a half hour or so.
