1 tablespoon Olive Oil
1/2 pound small Red Potatoes, halved
1/4 teaspoon Fresh Pepper
2/3 cup Crumbled Roquefort

Directions:
Directions:
Preheat oven to 450ºF. Brush the olive oil on a non-stick baking sheet, arrange potatoes cut sides up, sprinkle with salt and pepper, turn potatoes over. Roast for 20 minutes until brown on bottom. Turn over, keep warm, leave oven on. 5 minutes before serving sprinkle cheese on potatoes, bake 3 minutes more until cheese melts. Do not over cook, cheese will melt off potatoes.
