1/2 cup chopped onion
1/2 cup sliced celery
2 chopped garlic cloves
1/4 cup butter
1/2 cup plain flour
2 tsps. sugar
1 tsp. salt
1 tsp. basil
1/2 tsp. pepper
4 cups chicken broth
1 10-oz. pkg. frozen peas and carrots
4 cups cooked chicken, cubed chicken

Directions:
Directions:
Cook chicken, chopped small onion, 2 stalks celery, bay leaf, salt and pepper in enough water to completely cover for 2-3 hours. Cool and dice. Reserve broth.

Saute onion, celery and garlic in butter. Add flour, sugar, salt, basil and pepper. Stir for 1 minute. Add chicken broth. Cook peas and carrots for 5 minutes before adding to mixture. Add chicken and mix well. Put mixture in a greased baking dish. Drop by tblsps. on top of mixture, dumplings made of 2 cups buttermilk biscuit mix, 2 tblsps. basil and 2/3 cup milk (about 12 dumplings). Bake for 30 minutes in 350º preheated oven. Cover with foil and bake additional 10 minutes.
