1 and 1/2 c ups sugar
1 cup butter , softened
4 cups sifted flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 large eggs
Juice and grated rind of two large Florida oranges
1 cup buttermilk
Juice and grated rind of one medium orange
1 Tbsp melted butter
1 box (1 lb) confectioners sugar, sifted.
Cream the butter and sugar in mixer. Add the eggs, one at a time, beating well after each. Sift dry ingredients and add in mixer alternately with the buttermilk, oranges juice and grated rind. Do not overmix.
Drop the dough by teaspoon on parchment paper or non-stick baking sheet. (Make small cookies)
Bake at 425º for 10-12 minutes. While the cookies bake, prepare the glaze.
Remove cookies from pans or slide parchment to counter with the cookies in place.
Immediately frost the cookies with glaze.
The dough for these cookies could be spread thinly in a Jelly roll sheet pan, and cut into squares or diamond shapes for a party. If so, bake at 375º for 12-15 min (watch carefully) and glaze before cutting.
